Life-Changing Freezer Meals!
I decided to try my hand at incorporating freezer meals into our weekly dinner routine and it is super helpful! I kid you not even life-changing. I should have done this a long time ago. I hope to always keep this up. Basically my goal is to make freezer meals at least two times a month, but preferably once a week. Then once a week we get to enjoy eating them.
When I know it will be a busy day I put this meal to defrost in the fridge. Come dinner I just place it in the oven and cook for 30 min or whatever the cook time is and it is ready to go like I had just slaved away for the past hour preparing it. Not only is my kitchen kept clean but the stress and pressure of this time of day is suddenly removed. It's almost odd, it's so nice!
It's just a matter of setting aside the time to prepare them into the routine. It's really not hard at all and if I am in the kitchen anyway making another meal why not be multitasking and getting some extra meals ready to go, too!
Tricks that made this work for me:
1. I bought a bunch of disposable tin freezer dishes. I got a pack of 30 on Amazon for $25 I believe. That way clean up will be so simple and they will fit uniformly stacked on top of each other in the freezer which is important to me.
2. I chose meals we already enjoy eating and doubled up the ingredients to make two at once.
3. The meals are best if they are more of a casserole type dish but I am sure you could branch out and try other things. For now, I personally like having them all in a uniform freezer meal tin. It keeps it simple.
I am a beginner at this but I have a feeling I am going to become an expert at it with how HELPFUL it has been. Meals that have a crust I will pour on top the day of so it tastes and looks perfectly fresh.
Next meals to try:
Chicken Pot Pie
Shepherd's Pie
Meals I've made and LOVE so far:
Ground Turkey Sweet Potato & Tater Tot Hash
Healthy Lasagna with Pureed LF Cottage Cheese
Mexican Casserole Topped in Corn Bread
Give it a try!
