Rediscovering Slow Cooker Meals

I am enjoying using my slow cooker again! I got out of using it for a while but I would like to incorporate it back into the routine at least twice a week. Clean up is a breeze with crockpot throw away liners, too! 

The trick that I wish I would have known, is to put the veggies in only at the very end like 20 min. before dinner time so the color remains vibrant and they are not mushy unless they are really hard veggies like potatoes that you want to be mushy. Slow Cooker cooking is definitely going back into my routine! Do you have any favorite healthy slow cooker meals? 😍
